Fall is here, which means it's time for holiday baking!  I am a mom to two little boys, a 2.5 year old and a 5 month old, so 2 rules I currently live by:
1. All food must be safe for toddler tasting
2. Try to add ingredients to boost milk supply

 I threw this together a day before a Halloween Festival Party for new moms! 

This recipe VEGAN, vegan cookie recipes mean you and your kids can eat all the batter without worrying about salmonella :-)  Flaxmeal is used instead of raw eggs to hold the batter together. 

Of course to celebrate this spooky month I wanted to dress up the cookies. They were originally going to be spiders, but it was too hard to stick 8 little pretzel legs into the cookies.. so the mummies were created instead!

**If you know a trick to make spider cookies please let me know, my 2 year old is currently obsessed with spiders.** 

 

Mummies' Peanut Butter-Oatmeal Vegan Lactation Cookies

 

Ingredients for cookies
2 cups all purpose flour
2½ cups rolled oats
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons of brewers yeast (you can find this at a Vitamin store, health food store, or amazon prime!)
2 teaspoons ground flax meal
¾ cup extra virgin olive oil
¾ cup peanut butter (look for peanut butter with only peanuts and no yucky added high fructose corn syrup)
1 cup sugar
1 cup brown sugar
½ cup almond vanilla milk (can also use soy or cashew)
2 teaspoons vanilla extract

Directions:
Preheat oven to 350 degrees
Lightly grease two cookie sheets
Mix flour, oats, baking powder, and salt in one bowl.
Mix oil, peanut butter, sugars, milk, and vanilla in another bowl.
Mix dry ingredients with wet.
Make tablespoon sized balls of dough
Space 1” apart
Bake 12-15 minutes
Cool 10 minute and then Icing!

 

Mummy Icing
As a new mom you only have a few hours between feedings, you can be fancy, make you own vanilla icing, put it in a icing bag, and voila (recipe below) BUT you can also buy vanilla icing in a container and BAM no more bowls to wash.  Not the healthiest option, but you're a breastfeeding mom and need a treat!

Ingredients for Vanilla Icing
3 and ¾ cups powdered sugar
3 Tbsp vegan butter
4 Tbsp vanilla soy milk (or any other non-dairy milk)
2 tsp vanilla extract

Directions: 
Mix the ingredients together in a bowl.
Use spatula to place icing in a cake icing bag.
I used a 'ribbon' tip, but feel free to experiment and let me know what you think worked best!






Experiment and put ribbon lines back and forth covering most of the cookie. 

Add the eyes on while the icing is still wet. If you have older kids this is the fun part, after eating the batter, of course!
